Development of a Novel Bioreactor for the Production of Galacto-Oligosaccharides (GOS)


  • To demonstrate a novel technology to transform low-value materials from dairy processing facilities into high-value prebiotic non-digestible food ingredients
  • To develop a reactor platform that can be applied across a variety of industries
  • To evaluate the relationship of the reaction conditions to the resulting GOS structure


  • Will provide dairy producers in Alberta and in Canada with a flexible tool to target the rapidly growing international market of functional health foods
  • Development of a scalable, continuous system for the production of GOS at higher efficiency, compared with existing industrial reactors
  • A new reactor technology that would allow for improved control of enzymatic reactions for various applications

Key Milestones

  • Determination of an empirical kinetic model for GOS production during bulk free-enzyme reactions
  • Determination of optimal reaction conditions for foam based reactions and comparative analysis with free-enzyme system
  • Integration of tangential flow filtration system with bioreactor and continuous separation of GOS product
  • Determine economic and commercial viability
